I split the first "discard" batch into cultures for Whole Wheat flour and 7 Grain Bread flour and see/smell live active cultures but still learning to get those varieties to rise as well as the unbleached. Would like to match the LaBrea variety sourdough baguette crunch and large inner bubbles
